Ingredients
- 4 white fish fillets
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1 onion, sliced
- 1 tbsp balsamic vinegar
Instructions
- Preheat oven to 400°F.
- In a small bowl, mix together garlic powder, paprika, oregano, thyme, salt, and black pepper.
- Rub the spice mixture onto both sides of the fish fillets.
- Heat olive oil in a large skillet over medium-high heat.
- Add the fish fillets and cook for 3-4 minutes on each side, until golden brown.
- Transfer the fish to a baking sheet and bake for 10-12 minutes, until cooked through.
- Meanwhile, in the same skillet, add the sliced bell peppers, zucchini, and onion.
- Cook for 5-7 minutes, until the vegetables are tender.
- Drizzle with balsamic vinegar and toss to coat.
- Serve the fish with the roasted vegetables.
