Ingredients

  • 1 lb. boneless, skinless chicken breast
  • 1 cup quinoa, rinsed
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 small red onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp. olive oil
  • 1 tsp. paprika
  • 1 tsp. cumin
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1/4 cup chopped fresh parsley
  • 2 cups low-sodium chicken broth

Directions

    Preheat your oven to 375°F.

    Season chicken with paprika, cumin, salt, and black pepper.

    In a pan, sear chicken in olive oil on medium heat for 3-4 minutes per side until browned.

    Remove chicken and sauté onion and garlic in the same pan until soft.
