Ingredients
- 1 lb lean ground turkey
- 1 tbsp olive oil
- 1 onion, chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 packet taco seasoning
- 1/2 cup water
- 8 whole wheat tortillas
- 1 cup shredded cheddar cheese
- 1 avocado, diced
- 1/4 cup chopped fresh cilantro
- 1 lime, cut into wedges
Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Add the onion and bell peppers and cook until softened, about 5 minutes.
- Add the ground turkey and cook until browned, breaking it up with a spoon as it cooks.
- Stir in the black beans, corn, taco seasoning, and water.
- Reduce the heat to low and simmer for 10 minutes.
- Warm the tortillas in the microwave or on a griddle.
- To assemble the tacos, spoon the turkey mixture onto each tortilla.
- Top with shredded cheese, diced avocado, and chopped cilantro.
- Squeeze a lime wedge over each taco before serving.
