Ingredients

  • 1 lb lean ground turkey
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 packet taco seasoning
  • 1/2 cup water
  • 8 whole wheat tortillas
  • 1 cup shredded cheddar cheese
  • 1 avocado, diced
  • 1/4 cup chopped fresh cilantro
  • 1 lime, cut into wedges

Instructions

  • Heat the olive oil in a large skillet over medium-high heat.
  • Add the onion and bell peppers and cook until softened, about 5 minutes.
  • Add the ground turkey and cook until browned, breaking it up with a spoon as it cooks.
  • Stir in the black beans, corn, taco seasoning, and water.
  • Reduce the heat to low and simmer for 10 minutes.
  • Warm the tortillas in the microwave or on a griddle.
  • To assemble the tacos, spoon the turkey mixture onto each tortilla.
  • Top with shredded cheese, diced avocado, and chopped cilantro.
  • Squeeze a lime wedge over each taco before serving.
