Ingredients
- 1 pound boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground paprika
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground coriander
- 1/4 teaspoon ground cinnamon
- Salt and pepper to taste
- 4 whole wheat pita breads
- 1 cup Greek yogurt
- 1/4 cup fresh lemon juice
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/2 cup diced cucumber
- 1/2 cup diced tomato
- 1/4 cup diced red onion
Instructions
- In a large bowl, combine the olive oil, garlic, cumin, paprika, turmeric, coriander, cinnamon, salt, and pepper.
- Add the chicken breasts to the bowl and toss to coat them in the marinade. Let the chicken marinate for at least 30 minutes, or up to overnight in the refrigerator.
- Preheat your grill or grill pan over medium-high heat.
- Remove the chicken from the marinade and grill for 6-8 minutes per side, or until cooked through and no longer pink in the center. Let the chicken rest for a few minutes, then slice it into thin strips.
- In a small bowl, whisk together the Greek yogurt, lemon juice, parsley, and mint.
- To assemble the shawarmas, spread a spoonful of the yogurt sauce onto each pita bread. Top with a few slices of grilled chicken, cucumber, tomato, and red onion.
- Fold the pita bread in half and serve immediately.
