  • 8 oz. ramen noodles
  • 4 cups low-sodium chicken broth
  • 1 tbsp. olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tbsp. ginger, grated
  • 1 tbsp. soy sauce
  • 1 tbsp. fish sauce
  • 1 tbsp. rice vinegar
  • 1 tsp. honey
  • 1 cup shiitake mushrooms, sliced
  • 1 cup bok choy, chopped
  • 1 cup bean sprouts
  • 1/4 cup cilantro, chopped
  • 1 lime, cut into wedges

Instructions

  • Cook the ramen noodles according to package instructions.
  • In a large pot, heat the olive oil over medium heat.
  • Add the onion, garlic, and ginger and cook until the onion is translucent.
  • Add the chicken broth, soy sauce, fish sauce, rice vinegar, and honey. Bring to a boil.
  • Reduce the heat and simmer for 10 minutes.
