Ingredients

  • 8 oz. ramen noodles
  • 4 cups low-sodium chicken broth
  • 1 tbsp. olive oil
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1 tbsp. fresh ginger, grated
  • 1 tbsp. low-sodium soy sauce
  • 1 tbsp. fish sauce
  • 1 tbsp. rice vinegar
  • 1 tsp. honey
  • 1 cup shiitake mushrooms, sliced
  • 1 cup bok choy, chopped
  • 1 cup bean sprouts
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges

Directions

    Prepare the ramen noodles according to package instructions and set aside.

    Heat olive oil in a large pot over medium heat.

    Add onion, garlic, and ginger, sauté until onion is translucent.
