Ingredients
- 1 lb. boneless, skinless chicken breast
- 1 tbsp. olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 tsp. dried oregano
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1/4 cup chicken broth
- 1/4 cup chopped fresh parsley
Instructions
- Preheat oven to 400°F.
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken and cook until browned on both sides, about 5 minutes per side.
- Remove chicken from skillet and set aside.
- Add bell peppers, onion, garlic, oregano, salt, and black pepper to skillet.
- Cook until vegetables are tender, about 5 minutes.
- Add chicken broth and stir to combine.
- Return chicken to skillet and spoon vegetable mixture over chicken.
- Bake in preheated oven for 20-25 minutes, or until chicken is cooked through.
- Garnish with chopped parsley and serve.
