Ingredients

  • 4 skinless, boneless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 1 cup low-sodium chicken broth
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 1/4 cup chopped fresh parsley

Instructions

  • Preheat oven to 375 degrees F (190 degrees C).
  • Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with garlic powder, dried basil, salt, and black pepper. Cook chicken in the hot oil until browned on both sides, about 5 minutes per side.
  • Transfer chicken to a baking dish. Arrange red bell pepper, yellow bell pepper, and onion around chicken.
  • Whisk chicken broth, cornstarch, and water together in a bowl until smooth; pour over chicken and vegetables.
  • Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, about 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Garnish with parsley before serving.
