Ingredients
- 1 cup brown rice
- 1 can low-sodium black beans, drained and rinsed
- 1 red bell pepper, diced
- 1 yellow onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 avocado, diced
- 1 lime, juiced
- 1/4 cup chopped fresh cilantro
Instructions
- Cook brown rice according to package instructions.
- In a large skillet, heat olive oil over medium heat.
- Add diced onion and red bell pepper and sauté until softened, about 5 minutes.
- Add minced garlic and sauté for an additional minute.
- Add cumin, chili powder, salt, and black pepper and stir to combine.
- Add drained and rinsed black beans and stir to combine.
- Reduce heat to low and let simmer for 5 minutes.
- In a small bowl, combine diced avocado, lime juice, and chopped cilantro.
- Serve black bean mixture over cooked brown rice and top with avocado mixture.
