Ingredients
- 1 cup quinoa
- 2 cups water
- 1 can black beans, drained and rinsed
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1/2 red onion, diced
- 1/2 cup chopped fresh cilantro
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon honey
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Rinse the quinoa in a fine mesh strainer and drain well.
- In a medium saucepan, bring the water to a boil. Add the quinoa and stir. Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the water is absorbed and the quinoa is tender.
- In a large bowl, combine the cooked quinoa, black beans, bell peppers, red onion, and cilantro.
- In a small bowl, whisk together the olive oil, red wine vinegar, honey, cumin, salt, and black pepper.
- Pour the dressing over the salad and toss to coat.
- Serve immediately or refrigerate until ready to serve.
