Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 can black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1/2 red onion, diced
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon honey
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • Rinse the quinoa in a fine mesh strainer and drain well.
  • In a medium saucepan, bring the water to a boil. Add the quinoa and stir. Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the water is absorbed and the quinoa is tender.
  • In a large bowl, combine the cooked quinoa, black beans, bell peppers, red onion, and cilantro.
  • In a small bowl, whisk together the olive oil, red wine vinegar, honey, cumin, salt, and black pepper.
  • Pour the dressing over the salad and toss to coat.
  • Serve immediately or refrigerate until ready to serve.
