Healthy Harvest Chicken Bowl

- 1 cup quinoa
- 2 cups water
- 1 lb boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh basil
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh mint
- 1/4 cup chopped fresh chives
- 1/4 cup chopped fresh dill
- 1/4 cup chopped fresh tarragon
- 1/4 cup chopped fresh thyme
- Preheat oven to 400°F.
- In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until quinoa is tender and water is absorbed.
- Meanwhile, season chicken breasts with olive oil, garlic powder, paprika, salt, and black pepper. Place on a baking sheet and bake for 20-25 minutes, or until cooked through.
- In a large skillet, heat olive oil over medium-high heat. Add bell peppers, zucchini, and yellow squash. Cook for 5-7 minutes, or until vegetables are tender.
- To assemble bowls, divide quinoa among four bowls. Top with cooked vegetables and sliced chicken. Garnish with cherry tomatoes and fresh herbs.
