Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 lb boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped fresh chives
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh tarragon
  • 1/4 cup chopped fresh thyme

Instructions

  • Preheat oven to 400°F.
  • In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until quinoa is tender and water is absorbed.
  • Meanwhile, season chicken breasts with olive oil, garlic powder, paprika, salt, and black pepper. Place on a baking sheet and bake for 20-25 minutes, or until cooked through.
  • In a large skillet, heat olive oil over medium-high heat. Add bell peppers, zucchini, and yellow squash. Cook for 5-7 minutes, or until vegetables are tender.
  • To assemble bowls, divide quinoa among four bowls. Top with cooked vegetables and sliced chicken. Garnish with cherry tomatoes and fresh herbs.
  • Serve immediately and enjoy!
