Ingredients

  • 1 lb lean ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 can diced tomatoes
  • 1 cup beef broth
  • 1 tsp paprika
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup uncooked quinoa
  • 1 cup shredded cheddar cheese

Instructions

  • Preheat oven to 375°F.
  • In a large skillet, cook ground beef over medium heat until browned. Drain any excess fat.
  • Add onion, garlic, red and green bell peppers, diced tomatoes, beef broth, paprika, chili powder, cumin, salt, and black pepper to the skillet. Stir to combine.
  • Add uncooked quinoa to the skillet and stir to combine.
  • Transfer the mixture to a 9x13 inch baking dish.
  • Cover the baking dish with foil and bake for 30 minutes.
  • Remove the foil and sprinkle shredded cheddar cheese over the top of the casserole.
  • Bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  • Let the casserole cool for a few minutes before serving.
