Ingredients
- 1 lb lean ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 can diced tomatoes
- 1 cup beef broth
- 1 tsp paprika
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup uncooked quinoa
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 375°F.
- In a large skillet, cook ground beef over medium heat until browned. Drain any excess fat.
- Add onion, garlic, red and green bell peppers, diced tomatoes, beef broth, paprika, chili powder, cumin, salt, and black pepper to the skillet. Stir to combine.
- Add uncooked quinoa to the skillet and stir to combine.
- Transfer the mixture to a 9x13 inch baking dish.
- Cover the baking dish with foil and bake for 30 minutes.
- Remove the foil and sprinkle shredded cheddar cheese over the top of the casserole.
- Bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Let the casserole cool for a few minutes before serving.
