Ingredients
- 1 cup quinoa
- 1 cucumber, diced
- 1 pint cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/2 cup Kalamata olives, sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water
- Cook quinoa according to package instructions
- In a large bowl, combine cooked quinoa, cucumber, cherry tomatoes, red onion, olives, feta cheese, and parsley
- In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper
- Pour dressing over salad and toss to combine
- Serve chilled and enjoy!
