Ingredients
- 2 eggs
- 1/2 avocado
- 1/2 cup spinach
- 1/4 cup diced tomatoes
- 1/4 cup diced onions
- 1/4 cup diced bell peppers
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a non-stick pan over medium heat.
- Add onions and bell peppers and sauté for 2-3 minutes.
- Add spinach and tomatoes and sauté for another 2-3 minutes.
- Crack eggs into the pan and cook until the whites are set but the yolks are still runny.
