Ingredients
- 1 cup split yellow lentils
- 2 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp turmeric
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper
- 1 tbsp olive oil
- 1 can diced tomatoes
- 1 cup spinach
- Salt and pepper to taste
Instructions
- Rinse the lentils and add them to a pot with the water. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the lentils are tender.
- While the lentils are cooking, heat the olive oil in a pan over medium heat. Add the onion and garlic and sauté until softened.
- Add the cumin, coriander, turmeric, paprika, and cayenne pepper to the pan and stir to combine.
- Add the can of diced tomatoes to the pan and stir to combine. Let simmer for 5-10 minutes.
- Add the spinach to the pan and stir until wilted.
- Add the tomato mixture to the pot with the lentils and stir to combine. Season with salt and pepper to taste.
- Serve hot and enjoy!
