Ingredients

  • 1 cup split yellow lentils
  • 2 cups water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp turmeric
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • 1 tbsp olive oil
  • 1 can diced tomatoes
  • 1 cup spinach
  • Salt and pepper to taste

Instructions

  • Rinse the lentils and add them to a pot with the water. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the lentils are tender.
  • While the lentils are cooking, heat the olive oil in a pan over medium heat. Add the onion and garlic and sauté until softened.
  • Add the cumin, coriander, turmeric, paprika, and cayenne pepper to the pan and stir to combine.
  • Add the can of diced tomatoes to the pan and stir to combine. Let simmer for 5-10 minutes.
  • Add the spinach to the pan and stir until wilted.
  • Add the tomato mixture to the pot with the lentils and stir to combine. Season with salt and pepper to taste.
  • Serve hot and enjoy!
