Ingredients
- 2 chicken breasts, sliced
- 1 cup sliced mushrooms
- 2 cups baby spinach
- 2 medium potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/2 tsp dried thyme
- 1/2 cup chicken broth
Instructions
- Preheat oven to 375°F.
- In a large skillet, heat olive oil over medium-high heat.
- Add chicken and cook until browned, about 5 minutes.
- Add mushrooms, onion, and garlic and cook until softened, about 5 minutes.
- Add potatoes, salt, pepper, paprika, and thyme and stir to combine.
- Add chicken broth and bring to a boil.
- Transfer skillet to oven and bake for 20-25 minutes, or until potatoes are tender and chicken is cooked through.
- Stir in baby spinach and let wilt, about 2 minutes.
