- 1 lb. lean beef (flank or skirt steak)
- 1 tbsp. olive oil
- 1 tsp. chili powder
- 1 tsp. cumin
- 1 tsp. garlic powder
- 1/2 tsp. paprika
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 8 corn tortillas
- 1/2 cup chopped onion
- 1/2 cup chopped cilantro
- 1/2 cup chopped tomato
- 1/2 cup chopped avocado
- 1/4 cup crumbled queso fresco
- 1 lime, cut into wedges
Instructions
- Preheat grill or grill pan to medium-high heat.
- In a small bowl, mix together chili powder, cumin, garlic powder, paprika, salt, and black pepper.
- Rub spice mixture onto both sides of the steak.
- Drizzle olive oil over the steak.
- Grill steak for 4-5 minutes per side, or until desired doneness is reached.
- Remove steak from grill and let rest for 5 minutes.
- While steak is resting, warm tortillas on the grill for 30 seconds per side.
