Ingredients

  • 1 lb lean ground beef
  • 1 cup quinoa
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 avocado, sliced
  • 1/4 cup chopped cilantro
  • 1 lime, juiced
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  • Cook quinoa according to package instructions.
  • In a large skillet, heat olive oil over medium-high heat.
  • Add ground beef and cook until browned, breaking it up into small pieces as it cooks.
  • Add cumin, chili powder, salt, and pepper to the skillet and stir to combine.
  • Add diced bell peppers to the skillet and cook for 3-4 minutes, until slightly softened.
