Ingredients
- 1 lb lean ground beef
- 1 cup quinoa
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 avocado, sliced
- 1/4 cup chopped cilantro
- 1 lime, juiced
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Cook quinoa according to package instructions.
- In a large skillet, heat olive oil over medium-high heat.
- Add ground beef and cook until browned, breaking it up into small pieces as it cooks.
- Add cumin, chili powder, salt, and pepper to the skillet and stir to combine.
- Add diced bell peppers to the skillet and cook for 3-4 minutes, until slightly softened.
- To assemble the bowls, divide cooked quinoa between four bowls.
- Top each bowl with the beef and bell pepper mixture.
- Add sliced avocado and chopped cilantro to each bowl.
- Drizzle lime juice over the top of each bowl.
