Ingredients
- 2 cups mixed salad greens
- 1 cup cooked chicken breast, diced
- 1/2 cup pineapple chunks
- 1/2 cup cherry tomatoes, halved
- 1/4 cup diced red onion
- 1/4 cup diced cucumber
- 1/4 cup diced avocado
- 2 slices cooked bacon, crumbled
- 2 hard-boiled eggs, sliced
- 1/4 cup shredded cheddar cheese
- 2 tablespoons chopped fresh cilantro
- 2 tablespoons chopped macadamia nuts
- 2 tablespoons coconut flakes
Instructions
- In a large bowl, combine the salad greens, chicken breast, pineapple chunks, cherry tomatoes, red onion, cucumber, avocado, bacon, hard-boiled eggs, cheddar cheese, cilantro, macadamia nuts, and coconut flakes.
- Toss gently to combine.
- In a small bowl, whisk together the dressing ingredients: 2 tablespoons olive oil, 1 tablespoon apple cider vinegar, 1 teaspoon honey, 1/2 teaspoon Dijon mustard, salt, and pepper.
