Ingredients

  • 2 cups mixed salad greens
  • 1 cup cooked chicken breast, diced
  • 1/2 cup pineapple chunks
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup diced red onion
  • 1/4 cup diced cucumber
  • 1/4 cup diced avocado
  • 2 slices cooked bacon, crumbled
  • 2 hard-boiled eggs, sliced
  • 1/4 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons chopped macadamia nuts
  • 2 tablespoons coconut flakes

Instructions

  • In a large bowl, combine the salad greens, chicken breast, pineapple chunks, cherry tomatoes, red onion, cucumber, avocado, bacon, hard-boiled eggs, cheddar cheese, cilantro, macadamia nuts, and coconut flakes.
  • Toss gently to combine.
