Ingredients
- 1 lb lamb or chicken, thinly sliced
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 pita breads
- 1 cup sliced tomatoes
- 1 cup sliced cucumbers
- 1/2 cup sliced red onions
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup tzatziki sauce
Instructions
- In a large bowl, combine olive oil, garlic, oregano, thyme, paprika, salt, and black pepper. Add the sliced lamb or chicken and toss to coat. Marinate in the refrigerator for at least 1 hour, or overnight for best results.
- Preheat grill or grill pan over medium-high heat. Remove the meat from the marinade and discard the excess marinade. Grill the meat for 3-4 minutes per side, or until cooked through and slightly charred. Remove from heat and let rest for a few minutes.
- Warm the pita breads on the grill for about 1 minute per side, or until lightly toasted.
- To assemble the gyros, spread a spoonful of tzatziki sauce on each pita bread. Top with a few slices of grilled meat, sliced tomatoes, cucumbers, red onions, crumbled feta cheese, and chopped parsley. Fold the pita bread in half and serve immediately.
