Ingredients

  • 1 cup quinoa
  • 1 can black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1/4 cup chopped cilantro
  • 1 lime, juiced
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 4 hard boiled eggs, sliced
  • 1/2 cup plain Greek yogurt
  • 1/4 cup chopped green onions

Instructions

  • Cook quinoa according to package instructions.
  • In a large bowl, combine cooked quinoa, black beans, red bell pepper, avocado, cilantro, lime juice, salt, and black pepper.
  • Divide mixture into four bowls.
