Ingredients
- 1 cup quinoa
- 1 can black beans, drained and rinsed
- 1 red bell pepper, diced
- 1 avocado, diced
- 1/4 cup chopped cilantro
- 1 lime, juiced
- 1/4 tsp salt
- 1/4 tsp black pepper
- 4 hard boiled eggs, sliced
- 1/2 cup plain Greek yogurt
- 1/4 cup chopped green onions
Instructions
- Cook quinoa according to package instructions.
- In a large bowl, combine cooked quinoa, black beans, red bell pepper, avocado, cilantro, lime juice, salt, and black pepper.
- Divide mixture into four bowls.
