Ingredients
- 1 pound ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can diced tomatoes
- 1 cup cooked rice
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup shredded cheese
- 1/4 cup chopped fresh cilantro
Instructions
- In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add the diced onion, minced garlic, and diced bell pepper to the skillet. Cook until the vegetables are tender.
- Stir in the diced tomatoes, cooked rice, chili powder, cumin, paprika, salt, and pepper. Simmer for 10 minutes.
- Sprinkle the shredded cheese over the top of the mixture. Cover the skillet and cook until the cheese is melted.
- Garnish with chopped fresh cilantro before serving.
