Ingredients

  • 1 pound ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can diced tomatoes
  • 1 cup cooked rice
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheese
  • 1/4 cup chopped fresh cilantro

Instructions

  • In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Add the diced onion, minced garlic, and diced bell pepper to the skillet. Cook until the vegetables are tender.
  • Stir in the diced tomatoes, cooked rice, chili powder, cumin, paprika, salt, and pepper. Simmer for 10 minutes.
  • Sprinkle the shredded cheese over the top of the mixture. Cover the skillet and cook until the cheese is melted.
  • Garnish with chopped fresh cilantro before serving.
