Ingredients
- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
- 4 medium potatoes, peeled and diced
- 1 bunch green onions, thinly sliced
- 4 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp ground coriander
- 1/4 tsp cayenne pepper
- 4 cups chicken broth
- 1 tbsp olive oil
- 1 bunch radishes, thinly sliced
- 1 tbsp honey
- 1 tbsp apple cider vinegar
- Salt and pepper, to taste
Instructions
- In a large pot or Dutch oven, heat the olive oil over medium-high heat.
- Add the chicken and cook until browned on all sides, about 5 minutes.
- Add the garlic, cumin, paprika, coriander, and cayenne pepper, and cook for another minute, stirring constantly.
- Add the potatoes, green onions, and chicken broth, and bring to a boil.
- Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the potatoes are tender and the chicken is cooked through.
- While the stew is simmering, make the spiced radishes. In a small bowl, whisk together the honey, apple cider vinegar, and a pinch of salt and pepper.
- Add the sliced radishes and toss to coat. Set aside.
