Ingredients
- 1 cup brown rice
- 2 cups water
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 zucchini, chopped
- 1 cup broccoli florets
- 1 cup snow peas
- 1 cup edamame
- 1 avocado, sliced
- 1/4 cup chopped fresh cilantro
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- In a medium saucepan, combine the brown rice and water. Bring to a boil, then reduce heat to low and simmer for 45 minutes, or until the rice is tender and the water has been absorbed.
- While the rice is cooking, heat the olive oil in a large skillet over medium heat. Add the onion and garlic and sauté for 2-3 minutes, or until the onion is translucent.
- Add the red bell pepper, zucchini, broccoli, and snow peas to the skillet. Sauté for 5-7 minutes, or until the vegetables are tender but still crisp.
- Add the edamame to the skillet and sauté for an additional 2-3 minutes, or until heated through.
- To assemble the rice bowls, divide the cooked rice among four bowls. Top each bowl with the sautéed vegetables, sliced avocado, and chopped cilantro.
- Drizzle each bowl with lime juice and season with salt and pepper to taste.
- Serve immediately and enjoy!
