Ingredients

  • 1 cup brown rice
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 zucchini, chopped
  • 1 cup broccoli florets
  • 1 cup snow peas
  • 1 cup edamame, shelled
  • 1 avocado, sliced
  • 1/4 cup chopped fresh cilantro
  • 1 lime, juiced
  • Salt and pepper to taste

Directions

    Combine brown rice and water in a pot; bring to boil, reduce heat, cover and simmer until cooked, about 45 minutes.

    While rice is cooking, heat olive oil in a skillet over medium heat. Sauté onion and garlic until soft.

    Add bell pepper, zucchini, broccoli, and snow peas. Cook until vegetables are tender-crisp.
