Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1/4 cup extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup lemon juice
  • 1 tbsp red wine vinegar
  • Wooden skewers (soaked) or metal skewers
  • 1 cup plain Greek yogurt
  • 1/2 cup cucumber, grated and drained
  • 1 tbsp fresh dill, chopped
  • 1 tbsp lemon juice
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp extra virgin olive oil

Directions

  1. 1

In a large bowl, whisk together olive oil, garlic, oregano, thyme, rosemary, salt, black pepper, lemon juice, and red wine vinegar.

  2. 2

Cut chicken into 1-inch cubes and add to marinade. Toss well, then cover and refrigerate for at least 1 hour.

  3. 3

For tzatziki, use hands or a towel to squeeze excess moisture from grated cucumber.

  4. 4

Combine Greek yogurt, drained cucumber, dill, lemon juice, salt, pepper, and olive oil in a bowl. Mix well and chill.

  5. 5

    Preheat grill to medium-high heat.

  6. 6

Thread marinated chicken onto skewers. Grill for 8-10 minutes, turning occasionally, until charred and cooked through.

  7. 7

    Let rest briefly before serving.

  8. 8

Serve skewers with tzatziki sauce on the side.

Chef's tip

For more intense flavor, marinate the chicken overnight. Serve with a side of mixed greens for a complete meal.
