Ingredients
- 2 lbs boneless, skinless chicken breasts
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup lemon juice
- 1/4 cup plain Greek yogurt
- 1/4 cup cucumber, grated
- 1 clove garlic, minced
- 1 tbsp fresh dill, chopped
- 1 tbsp fresh lemon juice
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- In a large bowl, combine the olive oil, minced garlic, dried oregano, dried thyme, dried rosemary, salt, black pepper, and lemon juice. Mix well.
- Cut the chicken breasts into 1-inch cubes and add them to the marinade. Toss to coat the chicken evenly. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or overnight for best results.
- While the chicken is marinating, prepare the tzatziki sauce. In a small bowl, combine the Greek yogurt, grated cucumber, minced garlic, fresh dill, lemon juice, salt, and black pepper. Stir until well combined. Cover and refrigerate until ready to serve.
- Preheat the grill to medium-high heat. Thread the marinated chicken cubes onto skewers, leaving a small space between each piece. Discard any remaining marinade.
- Grill the chicken skewers for about 8-10 minutes, turning occasionally, until they are cooked through and slightly charred.
- Remove the chicken skewers from the grill and let them rest for a few minutes. Serve hot with the tzatziki sauce on the side.
