Granola Bliss

About this recipe

Granola Bliss is a delightful and wholesome treat that's perfect for breakfast, a snack, or even a healthy dessert. This modern take on a classic granola recipe combines rolled oats, a variety of nuts and seeds, and the subtle sweetness of honey or maple syrup. It's heart-healthy, full of fiber, and customizable with your favorite nuts and dried fruits.

Ingredients

  • 2 cups rolled oats
  • 1 cup mixed nuts (such as almonds, walnuts, and pecans), coarsely chopped
  • 1/2 cup mixed seeds (such as pumpkin, sunflower, and chia seeds)
  • 1/2 cup dried cranberries, coarsely chopped
  • 1/4 cup honey or pure maple syrup
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon sea salt

Directions

  1. 1

Preheat the oven to 325°F (163°C) and line a baking sheet with parchment paper.

  2. 2

In a large bowl, stir together the oats, nuts, seeds, and dried cranberries.

  3. 3

In a small saucepan over low heat, combine the honey or maple syrup, melted coconut oil, vanilla extract, cinnamon, and salt. Stir until smooth.

  4. 4

Pour the liquid mixture over the dry ingredients and mix well to coat.

  5. 5

Spread the mixture evenly onto the prepared baking sheet, pressing it down gently.

  6. 6

Bake for 20-25 minutes, stirring halfway through, until golden brown.

  7. 7

Remove from the oven and allow to cool completely before breaking into clusters.

  8. 8

Store in an airtight container for long-lasting freshness.

Chef's tip

For a vegan version, replace honey with maple syrup. Feel free to add other dried fruits like apricots or raisins for variety.
