  • 1 tbsp. olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 tbsp. chili powder
  • 1 tsp. cumin
  • 1 tsp. paprika
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1/4 cup water
  • 8 gluten-free taco shells
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro

Instructions

  • In a large skillet, heat the olive oil over medium heat.
  • Add the onion and garlic and cook until softened, about 5 minutes.
  • Add the ground turkey and cook until browned, about 10 minutes.
  • Add the red and green bell peppers, chili powder, cumin, paprika, salt, and black pepper.
  • Stir to combine and cook for 5 minutes.
  • Add the water and stir to combine.
  • Reduce the heat to low and simmer for 10 minutes.
  • To assemble the tacos, place a spoonful of the turkey mixture into each taco shell.
  • Top with shredded lettuce, diced tomatoes, shredded cheddar cheese, and chopped cilantro.
  • Serve immediately.
