Ingredients
- 1 cup dried split peas
- 4 cups vegetable broth
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Rinse the split peas under cold water and drain.
- In a large pot, heat some oil over medium heat.
- Add the onion, carrots, celery, and garlic to the pot and sauté until softened.
- Add the split peas, vegetable broth, thyme, bay leaf, salt, and pepper to the pot.
- Bring the mixture to a boil, then reduce heat and simmer for about 45 minutes or until the split peas are tender.
- Remove the bay leaf and use an immersion blender to puree the soup until smooth.
- If the soup is too thick, add more vegetable broth or water to reach desired consistency.
