Ingredients

  • 1 cup dried split peas
  • 4 cups vegetable broth
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  • Rinse the split peas under cold water and drain.
  • In a large pot, heat some oil over medium heat.
  • Add the onion, carrots, celery, and garlic to the pot and sauté until softened.
  • Add the split peas, vegetable broth, thyme, bay leaf, salt, and pepper to the pot.
