Ingredients

  • 2 cups gluten-free all-purpose flour
  • 1 tsp xanthan gum
  • 1 tsp salt
  • 2 tsp active dry yeast
  • 1 cup warm water
  • 2 tbsp honey
  • 2 eggs
  • 1/4 cup olive oil

Instructions

  • In a small bowl, combine the warm water, honey, and yeast. Let it sit for 5 minutes until foamy.
  • In a large mixing bowl, combine the flour, xanthan gum, and salt.
  • Add the yeast mixture, eggs, and olive oil to the dry ingredients. Mix until well combined.
  • Transfer the dough to a greased loaf pan and smooth out the top with a spatula.
  • Cover the pan with a clean kitchen towel and let it rise in a warm place for 1 hour.
  • Preheat the oven to 350°F (180°C).
  • Bake the bread for 30-35 minutes, or until golden brown and cooked through.
  • Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
