Ingredients
- 2 cups gluten-free all-purpose flour
- 1 tsp xanthan gum
- 1 tsp salt
- 2 tsp active dry yeast
- 1 cup warm water
- 2 tbsp honey
- 2 eggs
- 1/4 cup olive oil
Instructions
- In a small bowl, combine the warm water, honey, and yeast. Let it sit for 5 minutes until foamy.
- In a large mixing bowl, combine the flour, xanthan gum, and salt.
- Add the yeast mixture, eggs, and olive oil to the dry ingredients. Mix until well combined.
- Transfer the dough to a greased loaf pan and smooth out the top with a spatula.
- Cover the pan with a clean kitchen towel and let it rise in a warm place for 1 hour.
- Preheat the oven to 350°F (180°C).
- Bake the bread for 30-35 minutes, or until golden brown and cooked through.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
