Ingredients
- 2 lbs chicken breast
- 1 cup quinoa
- 2 bell peppers
- 1 onion
- 2 cloves garlic
- 1 tsp paprika
- 1 tsp cumin
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 1/4 cup chopped cilantro
Instructions
- 1. Cook quinoa according to package instructions.
- 2. Season chicken breast with paprika, cumin, salt, and pepper.
- 3. Heat olive oil in a large skillet over medium heat.
- 4. Add chicken breast and cook until browned on both sides, about 5 minutes per side.
- 5. Remove chicken from skillet and set aside.
- 6. In the same skillet, add chopped bell peppers, onion, and garlic. Cook until vegetables are tender.
