Ingredients

  • 2 lbs chicken breast
  • 1 cup quinoa
  • 2 bell peppers
  • 1 onion
  • 2 cloves garlic
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 1/4 cup chopped cilantro

Instructions

  • 1. Cook quinoa according to package instructions.
  • 2. Season chicken breast with paprika, cumin, salt, and pepper.
  • 3. Heat olive oil in a large skillet over medium heat.
  • 4. Add chicken breast and cook until browned on both sides, about 5 minutes per side.
