Ingredients
- 2 cups gluten-free flour
- 1/2 cup almond flour
- 1/2 cup coconut flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 cup milk
- 1 cup fresh berries (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, whisk together the gluten-free flour, almond flour, coconut flour, baking powder, and salt.
- In a separate bowl, cream together the melted butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk.
- Fold in the fresh berries, if desired.
- Pour the batter into a greased 9x9-inch baking dish.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool before serving.
