Ingredients
- 8 ounces gluten-free spaghetti
- 2 tablespoons olive oil
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 4 slices gluten-free bacon, chopped
- 2 cloves garlic, minced
- 1 cup gluten-free chicken broth
- 1 cup grated Parmesan cheese
- 2 large eggs
- Salt and pepper, to taste
- Chopped fresh parsley, for garnish
Instructions
- Cook the gluten-free spaghetti according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chicken pieces and cook until browned and cooked through. Remove from the skillet and set aside.
- In the same skillet, add the chopped bacon and cook until crispy. Remove from the skillet and set aside.
- Add the minced garlic to the skillet and cook until fragrant, about 1 minute.
- Pour in the gluten-free chicken broth and bring to a simmer. Cook for 2-3 minutes, or until slightly reduced.
- In a small bowl, whisk together the grated Parmesan cheese and eggs.
- Slowly pour the Parmesan and egg mixture into the skillet, stirring constantly, until the sauce thickens.
- Add the cooked spaghetti, cooked chicken, and cooked bacon to the skillet. Toss until everything is well coated in the sauce.
- Season with salt and pepper, to taste.
- Serve the gluten-free chicken carbonara hot, garnished with chopped fresh parsley.
