Ingredients

  • 8 ounces gluten-free spaghetti
  • 2 tablespoons olive oil
  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 4 slices gluten-free bacon, chopped
  • 2 cloves garlic, minced
  • 1 cup gluten-free chicken broth
  • 1 cup grated Parmesan cheese
  • 2 large eggs
  • Salt and pepper, to taste
  • Chopped fresh parsley, for garnish

Instructions

  • Cook the gluten-free spaghetti according to package instructions. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the chicken pieces and cook until browned and cooked through. Remove from the skillet and set aside.
  • In the same skillet, add the chopped bacon and cook until crispy. Remove from the skillet and set aside.
  • Add the minced garlic to the skillet and cook until fragrant, about 1 minute.
  • Pour in the gluten-free chicken broth and bring to a simmer. Cook for 2-3 minutes, or until slightly reduced.
  • In a small bowl, whisk together the grated Parmesan cheese and eggs.
  • Slowly pour the Parmesan and egg mixture into the skillet, stirring constantly, until the sauce thickens.
  • Add the cooked spaghetti, cooked chicken, and cooked bacon to the skillet. Toss until everything is well coated in the sauce.
  • Season with salt and pepper, to taste.
  • Serve the gluten-free chicken carbonara hot, garnished with chopped fresh parsley.
