Gluten-Free Chicken Carbonara

About this recipe

This Gluten-Free Chicken Carbonara delivers all the rich flavors of a traditional carbonara with the added twist of juicy chicken pieces, ensuring a hearty meal for those avoiding gluten. Perfect for a weeknight dinner, this dish combines creamy Parmesan with savory bacon and tender chicken, topped with a sprinkle of fresh parsley.

Ingredients

  • 8 ounces gluten-free spaghetti
  • 2 tablespoons olive oil
  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 4 slices gluten-free bacon, chopped
  • 2 cloves garlic, minced
  • 1 cup gluten-free chicken broth
  • 1 cup grated Parmesan cheese
  • 2 large eggs
  • Salt and pepper, to taste
  • Chopped fresh parsley, for garnish

Directions

  1. 1

Cook the gluten-free spaghetti according to package instructions. Drain and set aside.

  2. 2

Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned and cooked through. Remove and set aside.

  3. 3

In the same skillet, cook bacon until crispy. Remove and set aside on a paper towel.

  4. 4

Add minced garlic to the skillet, cooking until fragrant, about 1 minute.

  5. 5

Pour in chicken broth, bringing to a simmer. Cook until slightly reduced, about 2-3 minutes.

  6. 6

In a small bowl, whisk together Parmesan cheese and eggs. Slowly pour into skillet, stirring constantly, until sauce thickens.

  7. 7

Add cooked spaghetti, chicken, and bacon to the skillet. Toss to coat with sauce.

  8. 8

Season with salt and pepper to taste. Garnish with chopped parsley and serve hot.

Chef's tip

For best results, use freshly grated Parmesan and ensure the pan is not too hot when adding the egg mixture to avoid scrambling.
