Ingredients

  • 1 cup gluten-free flour
  • 1/2 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
  • 1/2 cup cherry preserves
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup fresh cherries, pitted and halved

Instructions

  • Preheat oven to 350°F. Grease and flour a 9-inch cake pan.
  • In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  • In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla.
  • Gradually add flour mixture to butter mixture, alternating with buttermilk, beginning and ending with flour mixture. Stir until just combined.
  • Pour batter into prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Let cake cool in pan for 10 minutes before transferring to a wire rack to cool completely.
  • Meanwhile, in a medium bowl, beat heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  • To assemble cake, spread cherry preserves over the top of the cooled cake. Top with whipped cream and fresh cherries.
  • Serve immediately or refrigerate until ready to serve.
