Ingredients
- 1 cup gluten-free flour
- 1/2 cup cocoa powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup buttermilk
- 1/2 cup cherry preserves
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup fresh cherries, pitted and halved
Instructions
- Preheat oven to 350°F. Grease and flour a 9-inch cake pan.
- In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
- In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla.
- Gradually add flour mixture to butter mixture, alternating with buttermilk, beginning and ending with flour mixture. Stir until just combined.
- Pour batter into prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let cake cool in pan for 10 minutes before transferring to a wire rack to cool completely.
- Meanwhile, in a medium bowl, beat heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- To assemble cake, spread cherry preserves over the top of the cooled cake. Top with whipped cream and fresh cherries.
- Serve immediately or refrigerate until ready to serve.
