Ingredients

  • 8 oz. glass noodles
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup snow peas
  • 1 cup bean sprouts
  • 1/2 cup chopped scallions
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped peanuts
  • 1/4 cup soy sauce
  • 2 tbsp. rice vinegar
  • 2 tbsp. honey
  • 1 tbsp. sesame oil
  • 1 tbsp. grated ginger
  • 1 clove garlic, minced
  • 1/4 tsp. red pepper flakes

Instructions

  • Cook the glass noodles according to package instructions. Drain and rinse with cold water.
  • In a large bowl, combine the cooked noodles, bell peppers, snow peas, bean sprouts, scallions, and cilantro.
  • In a small bowl, whisk together the soy sauce, rice vinegar, honey, sesame oil, ginger, garlic, and red pepper flakes.
  • Pour the sauce over the noodle mixture and toss to combine.
  • Garnish with chopped peanuts and serve immediately.
