Ingredients
- 8 oz. glass noodles
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup snow peas
- 1 cup bean sprouts
- 1/2 cup chopped scallions
- 1/4 cup chopped cilantro
- 1/4 cup chopped peanuts
- 1/4 cup soy sauce
- 2 tbsp. rice vinegar
- 2 tbsp. honey
- 1 tbsp. sesame oil
- 1 tbsp. grated ginger
- 1 clove garlic, minced
- 1/4 tsp. red pepper flakes
Instructions
- Cook the glass noodles according to package instructions. Drain and rinse with cold water.
- In a large bowl, combine the cooked noodles, bell peppers, snow peas, bean sprouts, scallions, and cilantro.
- In a small bowl, whisk together the soy sauce, rice vinegar, honey, sesame oil, ginger, garlic, and red pepper flakes.
- Pour the sauce over the noodle mixture and toss to combine.
- Garnish with chopped peanuts and serve immediately.
