Ingredients

  • 200g tempeh, sliced into small pieces
  • 3 cups cooked jasmine rice
  • 2 cloves garlic, minced
  • 1 medium onion, chopped
  • 2 eggs, beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon sweet soy sauce (kecap manis)
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons vegetable oil
  • 1 teaspoon lime juice
  • 2 scallions, thinly sliced
  • 1 tablespoon chopped fresh cilantro (optional)
  • 1 red chili, sliced (optional)

Directions

    Heat 1 tablespoon of vegetable oil in a large pan over medium heat.

    Add sliced tempeh and fry until golden brown and crispy, about 5 minutes. Remove and set aside.

    In the same pan, add remaining oil, garlic, and onion. Sauté until fragrant, approximately 2 minutes.

    Introduce cooked rice, soy sauce, sweet soy sauce, salt, and pepper, stirring to combine evenly.

    Move rice to one side of the pan. Pour beaten eggs on the other side. Scramble until fully cooked, then mix with the rice.

    Add fried tempeh back into the pan. Stir in lime juice and half of the sliced scallions.
