Ingredients

  • 3 cups cooked rice
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 yellow onion, diced
  • 1 cup frozen peas
  • 1 cup cooked and diced chicken
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 2 eggs, beaten

Instructions

  • Heat the vegetable oil in a large skillet over medium-high heat.
  • Add the garlic and ginger and cook for 1 minute.
  • Add the diced onion and cook for 2-3 minutes, until softened.
  • Add the diced bell peppers and cook for another 2-3 minutes.
  • Add the frozen peas and cooked chicken and cook for another 2-3 minutes.
  • Push the veggies and chicken to one side of the skillet and add the beaten eggs to the other side.
  • Scramble the eggs until cooked through, then mix everything together in the skillet.
  • Add the cooked rice and soy sauce to the skillet and stir to combine.
  • Cook for another 2-3 minutes, until everything is heated through.
