About this recipe

Fried Rice Fiesta is a vibrant, mouthwatering dish that combines savory chicken, fresh seasonal vegetables, and fluffy eggs with perfectly cooked rice. This recipe delivers a wholesome, flavorful meal that's easy to prepare, making it a great choice for busy weeknights.

Ingredients

  • 3 cups cooked and chilled rice
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 yellow onion, diced
  • 1 cup frozen peas
  • 1 cup cooked and diced chicken breast
  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 2 large eggs, beaten
  • 2 green onions, sliced

Directions

  1. 1

Heat 1 tablespoon of sesame oil in a large non-stick skillet over medium-high heat.

  2. 2

Add garlic and ginger, sauté until fragrant—about 1 minute.

  3. 3

Stir in the onion, bell peppers, and peas; cook until softened, around 3-4 minutes.

  4. 4

Push veggies to the side and add eggs; scramble until fully cooked.

  5. 5

Add chicken and rice to the skillet; pour soy sauce over and mix well.

  6. 6

Fry everything together, allowing the rice to brown slightly, for 3-4 minutes.

  7. 7

Stir in green onions, adjust seasoning if necessary, and serve hot.

Chef's tip

Ensure rice is chilled for best results; freshly cooked rice may result in a mushy texture.
