Ingredients
- 3 cups cooked rice
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 yellow onion, diced
- 1 cup frozen peas
- 1 cup cooked and diced chicken
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 2 eggs, beaten
Instructions
- Heat the vegetable oil in a large skillet over medium-high heat.
- Add the garlic and ginger and cook for 1 minute.
- Add the diced onion and cook for 2-3 minutes, until softened.
- Add the diced bell peppers and cook for another 2-3 minutes.
- Add the frozen peas and cooked chicken and cook for another 2-3 minutes.
- Push the veggies and chicken to one side of the skillet and add the beaten eggs to the other side.
- Scramble the eggs until cooked through, then mix everything together in the skillet.
- Add the cooked rice and soy sauce to the skillet and stir to combine.
- Cook for another 2-3 minutes, until everything is heated through.
- Serve hot and enjoy!
