Ingredients
- 2 cups cooked rice
- 1 cup mixed vegetables (carrots, peas, corn)
- 1/2 cup diced chicken or shrimp
- 2 eggs, beaten
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
Instructions
- Heat vegetable oil in a large skillet or wok over medium heat.
- Add diced chicken or shrimp and cook until fully cooked and slightly browned.
- Push the chicken or shrimp to one side of the skillet and add beaten eggs to the other side.
- Scramble the eggs until fully cooked, then mix them with the chicken or shrimp.
- Add the mixed vegetables to the skillet and cook until they are tender.
- Add the cooked rice to the skillet and stir to combine with the other ingredients.
- Season with soy sauce, garlic powder, black pepper, and salt.
- Continue cooking for another 2-3 minutes, stirring occasionally.
- Remove from heat and serve hot.
- Garnish with chopped green onions or cilantro, if desired.
