Ingredients

  • 2 cups cooked rice
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 1/2 cup diced chicken or shrimp
  • 2 eggs, beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt

Instructions

  • Heat vegetable oil in a large skillet or wok over medium heat.
  • Add diced chicken or shrimp and cook until fully cooked and slightly browned.
  • Push the chicken or shrimp to one side of the skillet and add beaten eggs to the other side.
  • Scramble the eggs until fully cooked, then mix them with the chicken or shrimp.
  • Add the mixed vegetables to the skillet and cook until they are tender.
  • Add the cooked rice to the skillet and stir to combine with the other ingredients.
  • Season with soy sauce, garlic powder, black pepper, and salt.
  • Continue cooking for another 2-3 minutes, stirring occasionally.
  • Remove from heat and serve hot.
  • Garnish with chopped green onions or cilantro, if desired.
