Ingredients
- 4 green tomatoes
- 1 cup flour
- 1 cup cornmeal
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 2 eggs
- 1/4 cup milk
- Vegetable oil for frying
Instructions
- Slice the green tomatoes into 1/4 inch thick slices.
- In a shallow dish, mix together the flour, cornmeal, salt, black pepper, paprika, and cayenne pepper.
- In another shallow dish, whisk together the eggs and milk.
- Dip each tomato slice into the egg mixture, then coat it with the flour mixture, pressing gently to adhere.
- Heat vegetable oil in a large skillet over medium heat.
- Fry the coated tomato slices in the hot oil until golden brown, about 2-3 minutes per side.
- Transfer the fried tomatoes to a paper towel-lined plate to drain excess oil.
