Baked Fish in Foil with Fresh Vegetables

About this recipe

This modern rendition of fish in foil is not only easy to prepare but also incredibly flavorful. With a medley of fresh vegetables and herbs, this dish brings a wholesome and delightful experience to your table while ensuring a simple clean-up with no lingering odors.

Ingredients

  • 4 fillets of white fish (such as mahi mahi or cod)
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 bell pepper, sliced
  • 1 onion, thinly sliced
  • 1 lemon, sliced
  • 4 sprigs of fresh thyme
  • 4 cloves of garlic, minced
  • 4 tablespoons of butter
  • Salt and pepper to taste

Directions

  1. 1

Preheat the oven to 400°F (200°C).

  2. 2

Arrange four sheets of aluminum foil on a clean surface.

  3. 3

Place an equal portion of zucchini, squash, bell pepper, and onion on each foil sheet.

  4. 4

Lay one fish fillet on top of the vegetables, seasoning with salt and pepper.

  5. 5

Top each fillet with lemon slices, a sprig of thyme, minced garlic, and a tablespoon of butter.

  6. 6

Fold the foil over the fish and vegetables, sealing the edges to create a packet.

  7. 7

Place packets on a baking sheet and bake for 20 minutes, or until the fish is cooked through.

  8. 8

Carefully open the packets and serve immediately.

Chef's tip

Ensure the packets are tightly sealed to keep the moisture in, creating perfectly steamed fish and vegetables.
