About this recipe

Indulge in a fusion of flavors with our Firecracker Chicken Rice, a perfect blend of spicy, sweet, and savory tastes. This dish features tender chicken pieces marinated and cooked in a fiery sauce, served over aromatic jasmine rice, and finished with fresh herbs and crunchy peanuts. Ideal for a quick yet impressive weeknight meal.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup jasmine rice
  • 2 tablespoons low-sodium soy sauce
  • 2 tablespoons sriracha sauce
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped roasted peanuts
  • 1/2 teaspoon cornstarch
  • 1 tablespoon water

Directions

  1. 1

Cook the jasmine rice according to package instructions and set aside.

  2. 2

Whisk together soy sauce, sriracha, honey, sesame oil, garlic, and ginger in a bowl; set aside.

  3. 3

Cut chicken into bite-sized pieces and coat lightly in a mixture of cornstarch and water.

  4. 4

Heat skillet over medium-high heat and add coated chicken. Cook until golden, about 5 minutes.

  5. 5

Pour sauce over chicken and stir well, allowing it to thicken and coat the chicken thoroughly.

  6. 6

Serve over cooked jasmine rice and garnish with green onions, cilantro, and peanuts.

Chef's tip

For a less spicy version, reduce the sriracha or balance with more honey. Ensure chicken is cooked thoroughly for safety.
