Ingredients
- 4 fillets of herring
- 1 cup water
- 1/2 cup white vinegar
- 1/4 cup sugar
- 1/2 tsp salt
- 1/2 cup cooked quinoa
- 1/2 cup shredded carrots
- 1/2 cup sliced cucumber
- 1/4 cup chopped fresh dill
- 1/4 cup chopped red onion
Instructions
- In a small saucepan, combine the water, vinegar, sugar, and salt. Bring to a boil, stirring until the sugar and salt dissolve. Remove from heat and let cool.
- Place the herring fillets in a shallow dish and pour the brine over them. Cover and refrigerate for at least 2 hours, or overnight.
- To assemble the bowls, divide the quinoa, carrots, cucumber, dill, and red onion among four bowls. Top each bowl with a fillet of herring and drizzle with some of the brine.
- Serve immediately and enjoy!
