Ingredients

  • 4 fillets of herring
  • 1 cup water
  • 1/2 cup white vinegar
  • 1/4 cup sugar
  • 1/2 tsp salt
  • 1/2 cup cooked quinoa
  • 1/2 cup shredded carrots
  • 1/2 cup sliced cucumber
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped red onion

Instructions

  • In a small saucepan, combine the water, vinegar, sugar, and salt. Bring to a boil, stirring until the sugar and salt dissolve. Remove from heat and let cool.
  • Place the herring fillets in a shallow dish and pour the brine over them. Cover and refrigerate for at least 2 hours, or overnight.
  • To assemble the bowls, divide the quinoa, carrots, cucumber, dill, and red onion among four bowls. Top each bowl with a fillet of herring and drizzle with some of the brine.
  • Serve immediately and enjoy!
