Ingredients

  • 1 lb white beans (dried or canned, drained if canned)
  • 8 oz smoked bacon, diced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 carrot, finely diced
  • 1 celery stalk, finely diced
  • 2 cups low-sodium chicken broth
  • 1 bay leaf
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp tomato paste

Directions

    Soak dried beans overnight, if using.

    In a large pot, cook diced bacon over medium heat until crispy. Remove and set aside.
