Ingredients

  • 1 cup jasmine rice
  • 1 pound chicken breast, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  • Cook jasmine rice according to package instructions.
  • In a large skillet, heat vegetable oil over medium-high heat.
  • Add chicken breast slices and cook until browned and cooked through, about 5 minutes.
  • Remove chicken from skillet and set aside.
  • In the same skillet, add sesame oil and heat over medium heat.
  • Add garlic and ginger and cook until fragrant, about 1 minute.
  • Add sliced bell peppers and onion and cook until vegetables are tender-crisp, about 5 minutes.
  • Return chicken to skillet and add soy sauce and oyster sauce.
  • Stir to coat chicken and vegetables in the sauce.
  • Cook for an additional 2 minutes, until heated through.
  • Serve the chicken and vegetables over jasmine rice.
