Ingredients
- 1 cup jasmine rice
- 1 pound chicken breast, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small onion, sliced
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil
- Salt and pepper to taste
Instructions
- Cook jasmine rice according to package instructions.
- In a large skillet, heat vegetable oil over medium-high heat.
- Add chicken breast slices and cook until browned and cooked through, about 5 minutes.
- Remove chicken from skillet and set aside.
- In the same skillet, add sesame oil and heat over medium heat.
- Add garlic and ginger and cook until fragrant, about 1 minute.
- Add sliced bell peppers and onion and cook until vegetables are tender-crisp, about 5 minutes.
- Return chicken to skillet and add soy sauce and oyster sauce.
- Stir to coat chicken and vegetables in the sauce.
- Cook for an additional 2 minutes, until heated through.
- Serve the chicken and vegetables over jasmine rice.
