Ingredients

  • 1 lb. ground beef
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 can (15 oz.) black beans, drained and rinsed
  • 1 can (15 oz.) corn, drained
  • 1 can (10 oz.) enchilada sauce
  • 1 can (4 oz.) diced green chilies
  • 1 tsp. chili powder
  • 1/2 tsp. cumin
  • 1/2 tsp. garlic powder
  • 1/4 tsp. salt
  • 1/4 tsp. black pepper
  • 8-10 flour tortillas
  • 2 cups shredded cheddar cheese

Instructions

  • Preheat oven to 375°F.
  • In a large skillet, cook ground beef over medium heat until browned. Drain any excess fat.
  • Add onion and green pepper to the skillet and cook until softened.
  • Add black beans, corn, enchilada sauce, green chilies, chili powder, cumin, garlic powder, salt, and black pepper to the skillet. Stir to combine.
  • Simmer for 10-15 minutes, stirring occasionally.
  • Place a spoonful of the beef mixture onto each tortilla and roll up tightly. Place seam-side down in a 9x13 inch baking dish.
  • Pour any remaining beef mixture over the top of the tortillas.
  • Sprinkle shredded cheese over the top of the tortillas.
  • Bake for 20-25 minutes, or until cheese is melted and bubbly.
  • Serve hot and enjoy!
