Ingredients
- 1 lb. ground beef
- 1 onion, chopped
- 1 green bell pepper, chopped
- 1 can (15 oz.) black beans, drained and rinsed
- 1 can (15 oz.) corn, drained
- 1 can (10 oz.) enchilada sauce
- 1 can (4 oz.) diced green chilies
- 1 tsp. chili powder
- 1/2 tsp. cumin
- 1/2 tsp. garlic powder
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- 8-10 flour tortillas
- 2 cups shredded cheddar cheese
Instructions
- Preheat oven to 375°F.
- In a large skillet, cook ground beef over medium heat until browned. Drain any excess fat.
- Add onion and green pepper to the skillet and cook until softened.
- Add black beans, corn, enchilada sauce, green chilies, chili powder, cumin, garlic powder, salt, and black pepper to the skillet. Stir to combine.
- Simmer for 10-15 minutes, stirring occasionally.
- Place a spoonful of the beef mixture onto each tortilla and roll up tightly. Place seam-side down in a 9x13 inch baking dish.
- Pour any remaining beef mixture over the top of the tortillas.
- Sprinkle shredded cheese over the top of the tortillas.
- Bake for 20-25 minutes, or until cheese is melted and bubbly.
- Serve hot and enjoy!
