Ingredients
- 2 eggs
- 1 veggie steak
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1/4 cup chopped onions
- 1/4 cup chopped bell peppers
- 1/4 cup chopped tomatoes
- 1/4 cup chopped spinach
- 1/4 cup shredded cheese
Instructions
- 1. Heat olive oil in a pan over medium heat.
- 2. Add onions and bell peppers to the pan and sauté until they become soft.
- 3. Add tomatoes and spinach to the pan and cook for another 2 minutes.
- 4. Push the vegetables to one side of the pan and crack the eggs into the other side.
- 5. Season the eggs with salt and pepper and scramble them until they are fully cooked.
- 6. Mix the scrambled eggs with the vegetables in the pan.
- 7. Place the veggie steak on top of the egg and vegetable mixture.
- 8. Sprinkle shredded cheese on top of the veggie steak.
- 9. Cover the pan and cook for another 2-3 minutes, or until the cheese has melted.
- 10. Remove from heat and let it cool for a minute before serving.
- 11. Serve hot and enjoy!
