Ingredients

  • 2 eggs
  • 1 veggie steak
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/4 cup chopped onions
  • 1/4 cup chopped bell peppers
  • 1/4 cup chopped tomatoes
  • 1/4 cup chopped spinach
  • 1/4 cup shredded cheese

Instructions

  • 1. Heat olive oil in a pan over medium heat.
  • 2. Add onions and bell peppers to the pan and sauté until they become soft.
  • 3. Add tomatoes and spinach to the pan and cook for another 2 minutes.
  • 4. Push the vegetables to one side of the pan and crack the eggs into the other side.
  • 5. Season the eggs with salt and pepper and scramble them until they are fully cooked.
  • 6. Mix the scrambled eggs with the vegetables in the pan.
  • 7. Place the veggie steak on top of the egg and vegetable mixture.
  • 8. Sprinkle shredded cheese on top of the veggie steak.
  • 9. Cover the pan and cook for another 2-3 minutes, or until the cheese has melted.
  • 10. Remove from heat and let it cool for a minute before serving.
  • 11. Serve hot and enjoy!
