Ingredients
- 3 cups cooked rice
- 3 eggs
- 1/2 cup frozen peas
- 1/2 cup diced carrots
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- Salt and pepper to taste
Instructions
- In a large skillet, heat the vegetable oil over medium-high heat.
- Add the onion and garlic and sauté until fragrant, about 2 minutes.
- Add the carrots and peas and sauté for another 2-3 minutes.
- Push the veggies to the side of the skillet and crack the eggs into the empty space.
