Ingredients

  • 2 large eggs
  • 1/4 cup diced bell peppers
  • 1/4 cup diced tomatoes
  • 1/4 cup diced onions
  • 1/4 cup shredded cheese
  • Salt and pepper to taste
  • 2 large tortillas

Instructions

  • In a bowl, beat the eggs and season with salt and pepper.
  • Heat a non-stick skillet over medium heat and spray with cooking spray.
  • Pour the beaten eggs into the skillet and cook until set, about 2-3 minutes.
  • Remove the cooked eggs from the skillet and set aside.
  • In the same skillet, sauté the bell peppers, tomatoes, and onions until softened, about 5 minutes.
  • Place the tortillas on a clean surface and divide the cooked eggs, sautéed vegetables, and shredded cheese evenly between them.
  • Roll up the tortillas tightly, tucking in the sides as you go.
  • Return the filled tortillas to the skillet and cook for 2-3 minutes on each side, until the cheese is melted and the tortillas are golden brown.
  • Remove from heat and let cool for a few minutes before serving.
  • Cut each wrap in half and serve warm.
