Ingredients
- 2 large eggs
- 1/4 cup diced bell peppers
- 1/4 cup diced tomatoes
- 1/4 cup diced onions
- 1/4 cup shredded cheese
- Salt and pepper to taste
- 2 large tortillas
Instructions
- In a bowl, beat the eggs and season with salt and pepper.
- Heat a non-stick skillet over medium heat and spray with cooking spray.
- Pour the beaten eggs into the skillet and cook until set, about 2-3 minutes.
- Remove the cooked eggs from the skillet and set aside.
- In the same skillet, sauté the bell peppers, tomatoes, and onions until softened, about 5 minutes.
- Place the tortillas on a clean surface and divide the cooked eggs, sautéed vegetables, and shredded cheese evenly between them.
- Roll up the tortillas tightly, tucking in the sides as you go.
- Return the filled tortillas to the skillet and cook for 2-3 minutes on each side, until the cheese is melted and the tortillas are golden brown.
- Remove from heat and let cool for a few minutes before serving.
- Cut each wrap in half and serve warm.
