Ingredients

  • 8 ounces of egg pasta
  • 2 tablespoons of olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 cup of cherry tomatoes, halved
  • 1 cup of spinach
  • 1/4 cup of grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  • Cook the egg pasta according to package instructions. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic. Cook until the onion is translucent and the garlic is fragrant.
