Ingredients

  • 4 large eggs
  • 1 medium onion, diced
  • 2 ripe tomatoes, diced
  • 2 medium potatoes, peeled and diced
  • 1 cup grated cheese (cheddar or your choice)
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Optional: 1/2 cup bell pepper, diced
  • Optional: 1 medium jalapeño, sliced

Directions

    Boil the diced potatoes until just tender, about 5-7 minutes. Drain and set aside.
