Ingredients
- 1 tablespoon vegetable oil
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 1 carrot, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 2 tablespoons miso paste
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 1 teaspoon sesame oil
- 1 teaspoon grated ginger
- 2 cups cooked rice
Instructions
- Heat the vegetable oil in a large skillet or wok over medium heat.
- Add the onion and garlic to the skillet and cook until softened, about 2 minutes.
- Add the bell pepper, carrot, broccoli, and snap peas to the skillet and cook for an additional 5 minutes, or until the vegetables are tender-crisp.
- In a small bowl, whisk together the miso paste, soy sauce, rice vinegar, honey, sesame oil, and grated ginger.
- Pour the miso sauce over the vegetables in the skillet and stir to coat evenly.
- Cook for an additional 2 minutes, or until the sauce has thickened slightly.
- Serve the stir fry over cooked rice and enjoy!
