Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 2 tablespoons yellow miso paste
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon maple syrup
  • 1 teaspoon sesame oil
  • 1 teaspoon freshly grated ginger
  • 2 cups cooked jasmine rice

Directions

  1. 1

Heat the vegetable oil in a large skillet or wok over medium-high heat.

  2. 2

Sauté the onion and garlic until fragrant and translucent, about 2 minutes.

  3. 3

Add the bell pepper, carrot, broccoli, and snap peas; stir-fry for 5 minutes until tender-crisp.

  4. 4

Whisk together the miso paste, soy sauce, rice vinegar, maple syrup, sesame oil, and ginger in a small bowl.

  5. 5

Pour the sauce over the vegetables, stirring to coat well, and cook for 2 minutes until slightly thickened.

  6. 6

Serve over warm jasmine rice and enjoy immediately.

Chef's tip

Feel free to add tofu or tempeh for extra protein. Adjust the miso and soy sauce levels to suit your taste preference.
