Ingredients

  • 1 box white cake mix
  • 1 cup water
  • 1/2 cup vegetable oil
  • 3 eggs
  • 1 can crushed pineapple, drained
  • 1 cup flaked coconut
  • 1/2 cup chopped pecans
  • 1 container whipped topping
  • 1 package instant vanilla pudding mix
  • 1 cup milk

Instructions

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.
  • In a large bowl, combine cake mix, water, oil, and eggs. Beat with an electric mixer on low speed for 30 seconds. Increase speed to medium and beat for an additional 2 minutes.
  • Fold in crushed pineapple, coconut, and pecans. Pour batter into prepared pan.
  • Bake for 30 to 35 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool completely.
  • In a medium bowl, whisk together whipped topping, vanilla pudding mix, and milk until smooth. Spread over cooled cake.
  • Refrigerate for at least 1 hour before serving.
