About this recipe

Celebrate Easter with a delightful cake that's light, fluffy, and filled with tropical flavors. This Easter Delight Cake combines the sweetness of pineapple and coconut with a creamy vanilla topping, making it a refreshing dessert that's easy to prepare and sure to please.

Ingredients

  • 1 box white cake mix
  • 1 cup water
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 can (20 oz) crushed pineapple, drained
  • 1 cup flaked coconut
  • 1/2 cup chopped pecans
  • 1 container (8 oz) whipped topping
  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1 cup cold milk

Directions

  1. 1

Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.

  2. 2

In a large bowl, combine cake mix, water, oil, and eggs. Beat with an electric mixer on low speed for 30 seconds, then medium speed for 2 minutes.

  3. 3

Gently fold in the crushed pineapple, coconut, and pecans. Pour the batter into the prepared pan.

  4. 4

Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely.

  5. 5

In a medium bowl, whisk together the whipped topping, instant vanilla pudding mix, and milk until smooth.

  6. 6

Spread the creamy topping over the cooled cake and refrigerate for at least 1 hour before serving.

Chef's tip

Ensure the cake is completely cooled before applying the whipped topping to prevent melting.
