Ingredients
- 1 box white cake mix
- 1 cup water
- 1/2 cup vegetable oil
- 3 eggs
- 1 can crushed pineapple, drained
- 1 cup flaked coconut
- 1/2 cup chopped pecans
- 1 container whipped topping
- 1 package instant vanilla pudding mix
- 1 cup milk
Instructions
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.
- In a large bowl, combine cake mix, water, oil, and eggs. Beat with an electric mixer on low speed for 30 seconds. Increase speed to medium and beat for an additional 2 minutes.
- Fold in crushed pineapple, coconut, and pecans. Pour batter into prepared pan.
- Bake for 30 to 35 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool completely.
- In a medium bowl, whisk together whipped topping, vanilla pudding mix, and milk until smooth. Spread over cooled cake.
- Refrigerate for at least 1 hour before serving.
